The "Khon Hua Jai Organic" (Organic-Hearted People) Community Enterprise in Ban Nam Sap Phatthana, Phatthana Nikhom Subdistrict and District, Lopburi Province, was formed by a group of 19 local farming households. Their goal is to practice chemical-free agriculture, yielding produce that is safe for consumers and environmentally friendly. The group’s products consist of various seasonal organic vegetables, which are sold at local village festivals and to regular customers; there are also plans to expand into TOP Supermarkets. The initiative to produce kaffir lime jam began when members noted that every household grew kaffir lime trees. During the harvest season, fallen fruit would often go to waste, littering the ground beneath the trees—a regrettable loss, especially given the fruits typically low market price. Members would previously use only the green zest for curry paste (selling it to market vendors) and extract the juice from the peeled fruit to make dishwashing liquid.
